"First
you have to have good grapes. You have to have very good grapes.
Good understanding of the wine making process, good practical decisions
regarding cleanliness and cellar operations or winery operations
are essential. You need to understand the flavours and the subtleties
of wine, understanding the smells and nuances of wine that come
about through nosing wines. Understanding barrel maturation, using
good barrels to mature your wines in, understanding as the wine
matures, the balance of flavours etc, understanding also the art
of blending, where different barrels are put together to make one
wine so that the art of blending is very very important. Basically
very clean practices when you are bottling, understanding bottle
aging, when to release wine matters. We actually age our reds before
we release, so you have to understand what is happening in the bottle."

The barrels selected to hold and age premium wines from
these grapes are the best available. Classic fine-grained French
oak barriques produced from the Alliers and Nevers forest for the
Cabernet Sauvignon, Alliers and Vosgnes forest for the Chardonnay
and Voignier.
