Dyson
Wines Chardonnay …
The fruit for the Dyson Chardonnays are grown at Maslin Beach, South
Australia (McLaren Vale region) 2.5 kms from the coast of the Fleurieu
Peninsula.
Dyson Chardonnay is totally dry grown, the vines having to rely
totally on natural rainfall to grow their wonderful grapes for us.
These conditions along with maritime climatical conditions result
in Dyson Chardonnays being big, rich, robust wines, with one of
the features being the strong green/gold colours present in the
wine.
Our Chardonnay grapes are handpicked at optimum sugar levels for
richness and ripeness. The grapes are cooled overnight to 10 degrees
centigrade before crushing and basket pressing, to protect and enhance
the flavours present in our grapes. The juice is then cold settled
and then fermented very slowly in french oak barriques. This practice
is carried out every vintage as it develops the complex flavours
the Dyson Chardonnays are known for.
Whilst the young wines are maturing on yeast in barrels, a malolactic
fermentation is introduced and the wine undergoes this fermentation
during aging in french oak barriques. This in turn creates more
rich, subtle complex flavours, which oak aged Chardonnays should
have. After the Chardonnay is matured in oak, it is then bottled
at the winery, and then bottle aged before release.
The practices under which the Chardonnay was made, ensure a wine
which will mature and age gracefully, featuring the subtle, rich
complex flavours that a dry grown Chardonnay is capable of showing.
A fine complex citrus dominated nose. Well developed with traces
of honey, rich marmalade flavours, and integrated oak dominate.
A creamy texture fills out the palate with softening and citrus
scented acidity still balancing.
