Wines Clarice Cabernet …
The grapes for the Dyson Clarice Cabernet Sauvignon are grown on
our Maslin Beach vineyard (McLaren Vale region). Our traditional
vineyard practices include hand-pruning, mulching, and using minimal
sprays, combined with good canopy management, all of which ensure
that top quality fruit is produced for our Clarice Cabernet.
The grapes are hand-picked at optimum ripeness at the end of March
each vintage, chilled overnight in our coolroom, and then crushed
into our open fermentors where the juice and skins are fermented
and cooled for 6 to 7 days. The juice is then run off, the grape
skins are pressed, and the free run juice is put into French Oak
Barriques to finish fermentation and to mature. The pressing wine
is then put into American Oak Barriques to finish fermentation and
mature. Both portions of this wine are matured for 24 to 30 months
in oak. All barriques are then assessed for quality, before both
portions of the wine are blended together prior to bottling. Dysons
believe strongly that minimal handing combined with minimal filtration
creates a superior wine.
The Dyson Cabernet Sauvignon shows rich varietal flavours with a
good depth of fruit on the palate. Fine grained tannins along with
subtle oak characters and balanced acid make this wine a pleasure
to enjoy. The subtle varietal cabernet flavours of the Dyson Cabernets,
are not over-ridden by hot alcohol flavours but more a subtle fruit/oak/acid
combination. These attributes combine together suberbly to create
wines which show style and class, and with careful cellaring, the
Dyson Cabernets will bring you many years of great drinking pleasure.
